Hm....Well, I'm assuming the immortal looks to be in his mid-twenties and the girl could be in a her early twenties? Would one of them meet the other while they worked? Or while on vacation at different places?

Maybe he took a vacation and met her?

Sure. Where would you like the vacation to be? Somewhere cold and snowy? Somewhere tropical and warm? Perhaps he hadn't meant to found her. Perhaps over the years, he was intentionally trying not to find her because he didn't want to fall in love again only for her to die.
