Doubling

I'm wondering what doubling is? I get the gist that its when you play two characters at the same time but could someone else please elaborate?

Not much to it than that, really. Generally, doubling refers to you playing one guy and one girl, while the other person plays one guy and one girl for the sake of romance, so that each player has a chance of playing their preferred gender. But really, it's exactly that: playing two characters simultaneously.
