We haven't done cross-breeding with humans due to ethics, but we definitely could.

The only problem is that the offspring are infertile. Still, we get some pretty cool-looking abominations.
We probably can't cross-breed a human and turkey. Advancements in medical science might force it, but the result wouldn't be something likely to survive for long. The problem is that the DNA is too different for fertilization to occur at all. Note that the cross-breeds listed aren't that far from each other - Dolphin and whale, for example. There's nothing about, say, a cat and a dolphin.
