Berserk has a pretty good yandere character known as Griffith.

Elfen Lied, if you want a female yandere known as Lucy.

And then there's the big one, Mirai Nikki (Future Diary) with Yuno.

I second the recommendation of Future Diary if you (Bread Crumb) haven't read/watched it. I'd also recommend a manga called Happy Sugar Life. It's as messed up as you'd expect from the genre, so I hope you enjoy it if you decide to read it.

One that isn't really a traditional yandere, but which I really am enjoying, is the one from "Talentless Nana". You may also enjoy the yandere from Boku no Hero Academia, albeit that one only comes much later, whereas in Nana, the yandere is the main character.

I don't typically read Yandere manga but Dead Tube was pretty good

Doll's Fall is a good one in my opinion. It's a yuri though.
