Interested. I was wondering though, could I create a character whose a Shiekiah or Twili, or are those off the table?

Aura Of Twilight I'm sure you can do any sort of race if you're able to make it work, KirienIsamu did say so earlier.

I don't think the sheikah are a race honestly, I think their more like a tribe. As for Twili, unfortunately since this is after botw which is after all games that means that twilight princess's plot already ended and the twilight realm was sealed off from hyrule forever.
But yeah a Sheikah is fine. Aura Of Twilight
