I looked it up; And multiple different sources are conflicted, "Jumping Ship" would be a good excuse, if Constantinople possessed enough ships to ferry anyway near a third of the populace away, and the declination of the capital beforehand was in no case cataclysmic, 800,000 doesn't reduce to 100,000 without some solid, logical reasoning. Rome's populace was pretty much slaughtered, the result? Rome became a useless city. Yet Constantinople was still one of the greatest cities in the world even after the Fourth Crusade; hence, the Ottoman's obsession with taking the city.
I agree that there are conflicting sources and that the amount is not solid, but I still believe 750,000 is way too much. The Byzantine/Roman Empire may not have had enough ships on it's own to transport that many people, but remember that Constantinople was a major trading center and ships from all over Europe, Asia, and Africa were coming in and out each day. And even if if Constantinople was a complete dump with few people, the Ottomans would still have desired it due to it's strategic position as a trading city. Also, how did Rome become useless? It was the seat of the Pope, making one of the most influential cities in Western Europe.

Check how many people Istanbul had soon after they conquered it, subtract a bit and there you have it.

Yeah, 750,000 is over the amount, but jumping ship was still nearly impossible; how many of the city population could afford transport on merchant ships? Not much. And yes the Ottoman Sultanate would want the city anyway, but they wnted not just for expansion and trade (and if it was a dump, it wouldn't have nearly as much trade), but for it's incredible architectural advantage over most other cities. As for Rome, it was the seat of the Papacy, for symbolic purposes, Rome was no greater than a mediocre city at the time, and that was with the incredible amount of finances the church sunk into it. This is because after the Slavics(?) looted the city, they not only butchered the majority of the populace, but they pretty much destroyed it, so severely that it never fully recovered. In it's prime, it was the greatest city in the known world. Where as Contantinople was still one of the greatest cities even after the Fourth Crusade, as the crusaders only sacked the city, as opposed to massacring the inhabitants and destroying it. A more accurate figure would perhaps be 400,000-500,000.

Istanbul's populace wouldn't be accurate, as huge parts of the city were completely rebuilt, as well as a massive inf;ux of people entering from the Ottoman Sultanate.
